Mini apple pies with a ginger orange crust dusted with vanilla bean infused sugar. These were also a huge hit! Unfortunately, clean up was a nightmare because the sugars from the apples caramelized and hardened on the cupcake tin, though nothing a hot water bath didn’t fix. Nothing is worse than a seasoned pan.
Pie crust is the bane of my existence. Every great baker needs a rock star pie crust in their repertoire. I’m still on the search. Ellie has a recipe that involved vodka. I’ve never baked with alcohol and am pretty intimidated by it. I’ll have to give it a shot soon.
